1. Preheat the oven to 350F. Spray 26 muffin cups with nonstick cooking spray
2. Puree the pears, water and vanilla in a blender until smooth. Sift the flour, baking powder, salt and baking soda together in a medium bowl.
3. Beat the sugar, eggs and oil in a large bowl with an electric mixer. Beat in the flour mixture. Add the pear puree gradually, beating just until mixed.
4. Fill the prepared muffin cups three-fourths full with batter. Bake until golden, 15 to 18 minutes. Serve warm.
