Mashed Potato Bake

3 large baking potatoes, peeled and cut into cubes 1 package (10 ounces) frozen chopped spinach, thawed 1/2 cup heavy cream 3 tablespoons butter 1/2 teaspoon salt 1/2 teaspoon pepper Topping1/2 cup Italian-style bread crumbs 3 tablespoons grated Parmesan cheese 3 tablespoons melted butter 1 teaspoon dried parsley
Creamy potatoes are mixed with spinach and then topped with crunchy bread crumbs in this rich side dish your family is sure to love.
1. Preheat the oven to 375°F. Lightly grease a medium casserole dish.
2. Place the potatoes in a medium pot. Add enough water to cover; bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a medium bowl. Mash the potatoes in the bowl.
3. Gradually add the spinach, cream, butter, salt and pepper to the bowl and mix until just combined. Transfer the potato mixture to the prepared dish and smooth the top.
4. For the topping, in a small bowl, combine the bread crumbs, Parmesan and melted butter. Sprinkle the topping evenly over the potato mixture. Bake until the topping is golden, about 15 minutes. Sprinkle the parsley over the top. Serve immediately.
Tips: Mashing Success For best results, cook the potatoes just until fork tender and drain thoroughly. To mash, use a hand masher, a potato ricer, a food mill, or an electric mixer. Be sure not to overbeat the potatoes because they will become thick and pasty.
