Hearty Pasta Casserole

1 package (16 ounces) penne pasta 2 tablespoons olive oil 2 shallots, minced 2 garlic cloves, minced 12 ounces fresh mushrooms, sliced 1 pound ground beef 1 can (14.5 ounces) stewed tomatoes 1 can (8 ounces) tomato sauce 2 teaspoons dried basil 1 teaspoon dried oregano 1/2 cup heavy cream 1/2 cup grated Parmesan cheese
This all-in-one beefy, baked pasta dish will keep you warm when the weather turns chilly.
1. Preheat the oven to 400°F. Grease a large casserole dish. Cook the pasta according to package directions.
2. Meanwhile, in a large pot, heat oil over medium heat. Add the shallots and garlic; sauté for 2 minutes.
3. Add the mushrooms and beef to the pot. Cook until the meat is browned, about 5 minutes. Stir in the tomatoes with liquid, tomato sauce, basil, oregano and cream; simmer for 5 minutes. Remove from the heat.
4. Drain the pasta; add to the pot. Stir in 1/4 cup Parmesan; mix well. Spoon the mixture into the prepared dish. Sprinkle the remaining Parmesan over the top. Cover; bake for 15 minutes. Uncover; bake until the cheese is melted, about 10 minutes.
Tip: Shallots Shallots are part of the onion family and are used to give food a mild oniony flavor. They range from the size of a large garlic clove to the size of a small onion. If shallots are unavailable, substitute minced onion.
