1. Preheat the oven to 350F. Combine the tomato paste, water, red wine, garlic, basil, oregano and salt in a small saucepan and bring to a boil over high heat. Reduce the heat to low and simmer, uncovered, for 15 minutes. Set aside.
2. Combine the ground beef, ground turkey, bread crumbs, zucchini, egg and 1/2 cup of the reserved tomato sauce in a large bowl and mix well. Shape the mixture into a loaf and place into an ungreased 9 by 5 by 3-inch loaf pan. Bake for 45 minutes.
3. Discard the drippings from the pan. Pour the remaining tomato sauce over the top of the meat loaf. Bake for 15 minutes longer, until the loaf is no longer pink inside.
4. Place the meat loaf on a serving platter and let cool slightly before serving.
Tip: Leftovers
Meat loaf sandwiches are a great way to put any leftovers to good use. Cut into thick slices and place them in crusty rolls. Top off with lettuce, tomato slices, onion slices and/or a little ketchup.
